How to make Roasted Parmesan Garlic Potatoes:
- Preheat the oven to 425°F (220°C).
- Wash and dice about 2 pounds of red potatoes. Place them in a large mixing bowl.
- Add 1/4 cup vegetable oil and toss to coat the potatoes evenly.
- Stir in 1/2 cup grated Parmesan cheese and the seasonings: 1 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Toss until well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 30–35 minutes, or until the potatoes are tender and golden, stirring once halfway through for even browning.
