  • 1 1/2 lbs boneless, skinless chicken breasts (or 3 cups cooked and chopped)
  • 2 carrots
  • 2 stalks celery
  • 1 small onion
  • 2 Tablespoons butter or bacon grease
  • 2 lbs potatoes
  • 2 teaspoons Better Than Bouillon Roasted Chicken Base
  • 3/4 teaspoon dried basil
  • 1/2 teaspoon freshly ground black pepper
  • Salt to taste
  • 1 cup milk
  • 2 Tablespoons cornstarch

Instructions

  1. Bake chicken in a covered dish at 350º until cooked through, or cook in an Instant Pot for 30 minutes. Keep the juices — they add flavor.
  2. When the chicken is done, shred with forks, transfer to a 4-quart or larger pot, and set aside (skip these steps if using pre-cooked chicken).
  3. Melt butter in a skillet over medium heat.

  5. Sauté the vegetables in the melted butter until crisp-tender.
  6. Peel (optional) and chop potatoes, then add them to the pot with the shredded chicken.

  8. Pour in two cups of water and stir to combine.
  9. Cover the pot and simmer until the potatoes are tender.
  10. While the stew simmers, whisk the milk and cornstarch together until smooth.

  12. Simmer 2–3 more minutes, stirring, until the stew thickens.
  13. Remove from heat and let the stew rest 5–10 minutes to settle and finish thickening.
  14. Serve with homemade biscuits or cornbread and a salad for a complete meal.
