Week three of the baking challenge was bread week, and this bacon, cheddar, and chive soda bread was my answer. I usually love baking bread but don’t do it as often as I’d like, so I decided to follow the show and bake a loaf that’s quick, forgiving, and full of flavor. Cook and drain the bacon well so excess grease doesn’t make the dough soggy; finely chopping the bacon helps it incorporate evenly. If your dough feels too dry while kneading, add buttermilk a tablespoon at a time until it holds together. Conversely, if the dough is too wet to handle, sprinkle a little flour on the work surface and knead just until combined. Soda bread benefits from minimal handling — overworking will make the loaf dense.

This recipe is great for adapting. Try substituting different herbs — parsley, thyme, or rosemary would all complement the cheddar and bacon. Swap in a different cheese to change the character of the loaf: a sharp aged cheddar will be punchy, while a milder cheese will make it creamier. For a vegetarian version, omit the bacon and add toasted walnuts or roasted vegetables for texture and savory depth.

Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 ounces sharp cheddar, cut into small cubes
  • 4–5 slices cooked bacon, finely chopped
  • ¼ cup chives, finely chopped
  • ¾ cup buttermilk, plus a few tablespoons extra if needed

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, sift together the flour, baking soda, sugar, salt, and black pepper.
  3. Stir the cubed cheddar, chopped bacon, and chopped chives into the dry mixture until evenly distributed.
  4. Add the buttermilk and stir until the mixture comes together into a shaggy dough.
  5. Turn the dough onto a lightly floured surface and knead gently for about 2 minutes. If the dough is too dry and won’t hold, add more buttermilk one tablespoon at a time; if too sticky, sprinkle a bit more flour and knead briefly.
  6. Shape the dough into a round loaf and place it on the prepared baking sheet. Cut a large X into the top about 2/3 of an inch deep to help the loaf expand while baking.
  7. Bake for 20–25 minutes, until the crust is golden brown and a skewer or toothpick inserted into the center comes out clean. If you prefer a darker crust, bake a few minutes longer and watch closely.
  8. Allow the loaf to cool slightly on a rack before slicing. Serve warm or at room temperature.
