- 1 pound (454g) uncooked bulk sausage
- 6 hard boiled eggs
- 1–2 raw eggs, beaten (for dipping)
- 1 cup (240 ml) coating of choice (crushed pork rinds, almond flour, coconut flour, or other)
- Oil spray, for coating

Instructions
- Peel the hard-boiled eggs. Divide the sausage into six even portions (about 75 g / 2.67 oz each).
- Flatten each sausage portion into a thin patty wide enough to wrap an egg. Center the egg on the patty and mold the sausage completely around it, sealing seams so the meat covers the egg evenly.
- Dip each sausage-wrapped egg into the beaten raw egg, then coat thoroughly in your chosen crumb (pork rinds, almond flour, etc.). Lightly spray the outside with oil to promote browning.
- Air fry at 400°F (205°C) for 12–16 minutes, turning once halfway through, until the coating is golden and the sausage is cooked.
- Slice in half and serve. Add a swipe of mustard across the cut yolk or a dash of hot sauce if you like.
Notes
To boost flavor, mix the sausage with a splash of Worcestershire sauce, chopped fresh parsley, or spices such as ground fennel.
