Making Your Sauce from Scratch

While store-bought mango habanero sauce is convenient, making your own is worth the effort. Homemade sauce highlights fresh mango, bright acid, and the floral heat of habanero peppers for a more vibrant glaze.

This style of sauce typically blends ripe mango, habanero peppers, a splash of vinegar or citrus, and a touch of sweetener and seasonings. If you have time, homemade will lift the dish to a new level.

3 Tips for the Best Oven Baked Wings

  • Pat them dry thoroughly: Removing surface moisture is essential for crisp skin when baking.
  • Use baking powder in the dry rub: A small amount of baking powder helps dry the skin and promotes a crunchier finish without adding flour.
  • Bake on a wire rack: Placing wings on a wire rack over a baking sheet lets hot air circulate so the wings crisp evenly all around.

Description

These Mango Habanero Chicken Wings are sticky-sweet and packed with island flavor thanks to a homemade mango habanero sauce. The wings are oven-baked to a crisp and coated in a sweet, spicy glaze for an addictive bite.

Ingredients

Scale

  • 2 lbs chicken wings
  • 2 tbsp oil (avocado, olive, canola, etc.)
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 2 tbsp baking powder
  • 1 cup mango habanero sauce
  • 1 tbsp butter

Instructions

  1. Preheat oven and pat dry wings. Preheat your oven to 425°F (220°C). Thoroughly pat wings dry with paper towels to remove excess moisture.
  2. Season with oil and dry ingredients. In a large bowl toss the wings with oil, salt, pepper, paprika, and baking powder until evenly coated.
  3. Bake the wings until crispy. Arrange wings in a single layer on a wire rack set over a baking sheet. Bake 40–45 minutes, flipping every 10–15 minutes, until the skin is crisp and the internal temperature reaches 165°F (74°C).
  4. Prep the mango habanero sauce and toss with wings. Warm the mango habanero sauce with the butter in a small saucepan until glossy and combined. Transfer wings to a large bowl, pour the sauce over them, and toss to coat. Serve immediately.

Equipment

Baking rack & sheet (use a wire rack set over a rimmed baking sheet for best results).
