Potato packets are one of my favorite easy side dishes. They can be cooked on the grill or baked in the oven and customized with countless flavor combinations. They pair well with burgers, pork chops, chicken, BBQ or steak — and cleanup is simple.
I like to prepare each serving in its own foil packet. Individual packets cook more evenly and make it easy to tailor each portion to personal tastes. One medium potato is typically one serving; a very large potato may serve two, and small potatoes may be combined.
Start by scrubbing the potatoes. Any variety works — russets, red new potatoes, or sweet potatoes. I’ve used russets and reds most often, but use what you prefer. Slice potatoes uniformly, about 1/8″ to 1/4″ thick, so they cook at the same rate.

Spray a sheet of foil with non-stick cooking spray, then fan the sliced potatoes across the center. Either spray the top lightly or add small pats of butter — this helps toppings stick to the potatoes instead of the foil. Season with salt and pepper.
Now add your toppings.

For my husband’s packet I layer onion, bacon, rosemary, thyme, and finish with Parmigiano-Reggiano. For mine I skip the bacon and cheese. You can add various meats (pancetta, ham, pepperoni) or vegetables (green pepper, jalapeño, zucchini). Keep all add-ins sliced to a similar thickness so they cook evenly.
Fold the long sides of the foil up toward the center, then fold the ends to seal. Bake at 350°F (175°C) for 20–30 minutes, or grill for the same time. Use caution when opening the packets — the steam inside will be very hot.

Ingredients
- 1 potato per person (russets, new reds, or sweet potatoes)
- 3 tbsp onion, diced
- 1 tbsp bacon or other cured meat (pancetta, ham, pepperoni)
- 1 handful cheese of choice, shredded or grated (Parmesan, cheddar, jack)
- 1 tsp herbs (rosemary, thyme, or your favorites)
- Non-stick cooking spray
- Salt and pepper

Preheat oven to 350°F (175°C). Tear off a piece of foil for each serving and spray the foil with non-stick cooking spray.

Scrub potatoes and slice 1/8″ to 1/4″ thick. Fan the slices onto the prepared foil. Lightly spray the potatoes or place small pats of butter on top. Add meat, cheese, vegetables and herbs as desired. Fold the long sides of the foil up over the center and fold the ends to seal the packet.

Bake at 350°F (175°C) for 20–30 minutes, or place on the grill for the same amount of time, until potatoes are tender.

Carefully open the packet to avoid hot steam and enjoy.
