Mediterranean Chicken

A quick Instant Pot Mediterranean chicken with bright lemon, garlic, and herb flavors. Tender, savory, and great with rice, couscous, or a simple salad.

Ingredients

  • Matty’s Greek-Style Garlic Lemon Chicken seasoning (see spices below)
  • 1 1/2 to 2 pounds chicken legs and thighs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp crushed mint
  • 1/2 tsp dried oregano
  • 3/4 cup chicken broth
  • 1 juice of a whole lemon about 1/4 cup
  • 1 Tablespoon low sodium soy sauce
  • 2 Tablespoons olive oil
  • 3 cloves minced garlic
  • Small bunch of cilantro, roughly chopped
  • 1 medium onion, sliced into 1/2 inch rings

Instructions

  • Set the Instant Pot to Sauté on High and let it preheat until the display shows “Hot.”
  • Mix the dry spices (salt, pepper, garlic powder, onion powder, crushed mint, oregano) and coat the chicken pieces evenly.
  • Add olive oil to the hot pot. Brown the chicken in batches without crowding, about 4 minutes per side. Remove browned pieces and set aside.
  • Add minced garlic and sauté briefly until fragrant. Pour in chicken broth, lemon juice, and soy sauce to deglaze the pot, scraping up browned bits with tongs or a spatula.
  • Cancel the Sauté function. Return the chicken to the pot, add chopped cilantro to the liquid, and arrange the sliced onion rings on top.
  • Secure the lid and set the valve to Sealing. Press the Poultry button and adjust the time to 10 minutes at high pressure.
  • Preheat your broiler to high and position the oven rack in the middle. When the Instant Pot finishes, perform a quick release. Transfer the chicken to a foil-lined baking sheet and broil 3 minutes per side until the skin crisps.
  • While broiling, cancel the Instant Pot and set it to Sauté on High to reduce the sauce for 6–10 minutes until slightly thickened. Spoon the reduced sauce over the chicken and serve hot. Enjoy.
