This is a copycat recipe for Arby’s Beef and Cheddar: thinly sliced roast beef, warm cheddar cheese sauce, and a zesty red ranch-style dressing piled on an onion sandwich bun.

I’d eat at Arby’s all the time if one were closer, so I recreated the Beef ‘n Cheddar at home. It’s basically roast beef with cheddar sauce and that distinctive red dressing on an onion bun, but the key is nailing the sauce.

Getting the red ranch-style dressing right makes the sandwich. I used a Country French with Orange Blossom Honey dressing that comes very close to the flavor I remember from the original. It’s not the official Arby’s recipe, but it works great—give it a try.
Serve the sandwich with beer-battered onion rings, a simple potato salad, or a Jamocha-style shake for a full fast-food-style meal at home.
How to make the best Beef ‘n Cheddar at home
Preheat the oven to 400°F (200°C).
Lay a sheet of aluminum foil flat on the counter.
Place the thinly sliced roast beef in the center of the foil and fold up all four sides to completely enclose the beef.
Bake for 10 to 15 minutes, until the beef is heated through.
When the beef is nearly done, heat the cheddar cheese sauce in a microwave-safe bowl for about 30 seconds or until warmed through.
Place the bottom half of an onion sandwich bun on a plate and spread 1–2 tablespoons of Country French with Orange Blossom Honey dressing over it.

Pile the heated roast beef slices onto the dressed bun, building a generous mound of meat.

Spoon the warmed cheddar cheese sauce over the roast beef, spreading it evenly so each bite is cheesy.

Reader tip: For a quick homemade cheese sauce, simmer 1 cup heavy cream or whole milk to reduce slightly, then add two slices of processed American cheese and 1 teaspoon tapioca flour; stir until smooth for a similar consistency.
Finish the sandwich by placing the top half of the onion bun in place and serve immediately while warm.
