This whiskey candied pecans recipe recreates that warm, spiced scent at home. They’re crunchy, flavorful, and surprisingly easy to make—ideal for gifting, snacking, or tucking on a cheese board.

How to make whiskey candied pecans

The process starts with ingredients you likely already have: granulated sugar, brown sugar, an egg white, a splash of whiskey (or substitute), some salt, and pecan halves. Mix, coat, and bake until the nuts are toasted and the sugar has formed a crunchy glaze. The whiskey adds a subtle warmth and complexity, but it’s not mandatory—use bourbon, omit the alcohol and add a tablespoon of water, or swap in a teaspoon of vanilla for a different flavor profile. Any alcohol will evaporate during baking, leaving behind the flavor without making the nuts boozy.

Egg white plays an important role: whipped to stiff peaks it creates a light foam that helps the sugar adhere and crisp up evenly. I recommend using a fresh separated egg white rather than liquid pasteurized whites from cartons—those don’t whip up as well and the coating may not get the same airy texture. If you’re vegan or avoiding eggs, aquafaba (the liquid from canned chickpeas) can be used as a replacement, but results may vary and I haven’t fully tested that swap.

Using a stand mixer or hand mixer makes whipping the egg white quick and easy—about two minutes until stiff peaks form. Be sure your mixing bowl and whisk are clean and dry for best results.

Not just pecans

This recipe works beautifully with other nuts too—almonds, walnuts, cashews, or a mixed assortment. Whatever you choose, use raw, unsalted nuts. Pre-roasted or salted nuts can burn while the sugar coating finishes, and the salt level will be harder to control. The sugar doesn’t need to be dissolved before baking; it will melt and crisp in the oven. Just toss the sugar evenly over the egg white-coated nuts and break up any large clumps so the coating bakes uniformly.

After baking and cooling, the pecans reach their final crunchy texture. Let them cool completely on the sheet pan before storing. When cool, transfer to an airtight container and keep them at room temperature for up to a week—if they last that long.

Ingredients

  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 1 egg white (see notes)
  • 1 1/2 tablespoons whiskey (or bourbon or water)
  • 4 cups pecan halves (about 1 pound)

Instructions

  1. Preheat oven to 275°F (135°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Mix the brown sugar, granulated sugar, and salt in a small bowl and set aside.
  3. In a clean bowl, beat the egg white with a mixer until stiff peaks form.
  4. Stir in the whiskey, then fold in the pecan halves until coated with the foam.
