Ingredients

  • 1.5 lb boneless skinless chicken breasts, pounded thin
  • 6 slices prosciutto
  • 4 in mozzarella string cheese sticks, cut in half
  • 1/3 cup fresh spinach
  • 1 1/2 tablespoons mayonnaise (organic or homemade recommended)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon Italian seasonings
  • 1/8 teaspoon black pepper
  • 1 1/2 teaspoons Parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C). Line or lightly oil a baking sheet.
  2. Place each chicken breast half between two pieces of plastic wrap or parchment and gently pound until thin and even.
  3. Remove the top layer of wrap. Lay a slice of prosciutto on each flattened chicken piece.
  4. Add a small handful of spinach and half a string cheese on top of the prosciutto. Roll each breast tightly around the filling, tucking the sides in as you roll. Secure with a toothpick if needed.
  5. Place the chicken rolls seam-side down on the prepared baking sheet.
  6. In a small bowl, mix mayonnaise, garlic powder, sea salt, Italian seasonings, and black pepper until combined.
  7. Brush the mayonnaise mixture over the tops and sides of the chicken rolls.
  8. Sprinkle with Parmesan cheese and bake for about 30 minutes, or until the chicken is cooked through and juices run clear. Remove toothpicks before serving.
