The Fresh Pineapple Margarita Cocktail uses fresh fruit instead of juice, good tequila, and real orange liqueur. Using the best ingredients makes a huge difference!

Last week I hosted a neighborhood committee meeting at my home and volunteered to bring a cocktail. I decided to make a Fresh Pineapple Margarita and it was a hit. Using fresh fruit, a quality tequila and a real orange liqueur elevates a margarita in a way juice or artificial mixers simply can’t.
One practical advantage for serving margaritas to a crowd: tequila is made from the agave plant and is naturally gluten free. That removes a common concern for guests and makes planning easier. I did run into a small snag while shopping though.
I’ve made dozens of margaritas for this blog over the years and wanted to try a fruit I hadn’t used before. At the market I passed strawberries, blackberries, raspberries, peaches and even mangoes — but the mangoes were too hard. I considered bananas (no), coconut (maybe), and then I saw fresh pineapples. That was the winner. I prefer fresh pineapple to juice; the texture and brightness of fresh fruit are worth the extra effort.

I’ve used fresh pineapple recently in a Pineapple Upside Down Cake and won’t go back to canned. If you’ve never tried it, fresh pineapple adds a lively flavor that canned fruit lacks. Pro tip: you can root a pineapple top to grow your own. Cut off the top with about 3/4″ of fruit attached, let it sit in a shallow dish with the bottom just touching water until roots form, then plant it. It’s a fun way to get more use from the fruit.

The basic margarita formula doesn’t change much: tequila, lime and orange liqueur are the foundation. For this recipe the important step is emulsifying fresh pineapple in a blender or food processor so the fruit becomes part of the drink. A good blender makes all the difference.
I always stress quality ingredients because they matter. Use a good tequila — avoid low-quality gold tequilas marketed as premium. For fruit-forward margaritas I typically use a blanco tequila for its clean agave flavor, though a reposado can work nicely too because the brief aging softens the spirit.

Blanco tequila is unaged and highlights the distiller’s work and the agave character. Reposado rests in oak for two months to a year and gains a smoother, rounder profile that can be excellent in simpler margaritas. For fruit-forward versions like this pineapple margarita, I prefer blanco because the fruit carries the flavor and the tequila should remain bright.
Real orange liqueur is another must. Skip cheap triple sec and choose an orange liqueur with genuine orange essence — it adds depth without tasting like sugary flavoring. For sweetening, I usually make simple syrup (equal parts water and sugar, heated just until the sugar dissolves, then cooled). Agave nectar is a fine alternative if you prefer.

I prepared about a cup of simple syrup at a time; it stores well in the refrigerator and is handy for many cocktails. At the meeting several guests told me this was the best margarita they’d had and one even asked for the recipe so she and her sister could make it at home.
If you enjoy fruit margaritas, there are many variations to explore — from blackberry and strawberry to prickly pear and blood orange. But when fresh pineapple is in season, this Fresh Pineapple Margarita is a bright, refreshing choice that’s easy to make for a crowd.

Ingredients
- 3 cups fresh pineapple chunks about 1.5 pounds
- 1 cup tequila blanco or reposado
- ¾ cup orange liqueur
- ¾ cup frozen limeade concentrate available next to frozen lemonade concentrate
- ¾ cups ice or ice water
- Lime wedges for rimming
- Equal amounts kosher salt and sugar combined
- Pineapple wedges for garnish
Instructions

Combine pineapple, tequila, orange liqueur, limeade and ice in a blender. Blend until smooth.

Rub a lime slice around the top of each glass and dip in the salt/sugar combination. Fill the glasses with ice and pour the margarita into the glasses.

Garnish with pineapple wedges.
