Haystacks My Way: Homemade Haystack Cookies Recipe

Have you ever heard of haystacks? I hadn’t until I met my husband. Haystacks were a staple meal from his childhood and were commonly served at his school.

So what exactly is a haystack? The easiest way to describe it is as a meatless taco served in a bowl—crunchy, layered, and customizable.

I admit I was skeptical at first, but after adjusting the recipe a bit, I discovered how delicious and versatile this dish can be.

My daughters love haystacks so much they ask for them in their school lunches. They’ve become one of our go-to meals on busy weeknights because they take only about 15 minutes to prepare—quick, satisfying, and easy.

The basic ingredients are Fritos, rice (I prefer Basmati), black beans, shredded cheese, lettuce, sour cream, diced tomatoes, and taco sauce or salsa.

The only cooking required is making the rice and warming the beans; the rest is simple prep—chopping lettuce and tomatoes, shredding cheese if needed.

Any white rice works for haystacks, but I prefer Basmati because its slightly nutty, buttery flavor adds depth compared to plain white rice.

After the rice is cooked and the beans are heated, it’s time to assemble. You can mix everything together, but for a neat presentation the layering I like is:

Fritos on the bottom, then rice, black beans, shredded cheese, lettuce, tomatoes, sour cream, and finished with taco sauce.

Haystacks — My Way!

  • Fritos
  • Basmati rice (or any white rice)
  • Black beans (canned or warmed)
  • Shredded cheese
  • Chopped lettuce
  • Diced tomato
  • Sour cream
  • Taco sauce or salsa

Cook rice according to package directions. Warm the black beans in a small saucepan or microwave until hot. Once the rice and beans are ready, assemble the haystacks in this order for serving:

Fritos on the bottom, then rice, black beans, shredded cheese, lettuce, tomato, sour cream, and taco sauce.

Extra tip: Haystacks make a great packed lunch. Reheat the rice and beans and place them in a thermos to stay hot. Pack the lettuce, tomato, cheese, and sour cream in separate containers and combine everything when you’re ready to eat. It’s a simple, portable meal the whole family will enjoy.
