⭐️ Why this recipe works

  • Uses simple pantry ingredients and common fresh fruit.
  • Balanced texture: crisp exterior with a soft, pillowy centre.
  • Clear step-by-step method makes the pavlova reliable for home cooks.
  • Customizable toppings: use seasonal fruit, curds, or passionfruit for variety.

🧾 Ingredient notes

  • Egg whites: Fresh egg whites whip up to provide the structure of the meringue. Room temperature egg whites reach full volume more easily.
  • Sugar: Granulated sugar stabilizes and sweetens the meringue. Add slowly so it fully dissolves for a glossy, stable finish.
  • Cornstarch: A small amount helps create the characteristic crisp shell and soft centre.
  • Vinegar or lemon juice: A little acid helps set the meringue and prevents weeping; cream of tartar is a good alternative.
  • Vanilla extract: Adds aromatic flavor to the meringue; use a good-quality extract for best results.
  • Whipped cream: Lightly sweetened whipped cream balances the crisp meringue and bright fruit.
  • Fresh fruit: Berries, kiwi, sliced peaches or roasted stone fruit all work beautifully. Roasted fruit adds a jammy, caramelised element.
  • Optional additions: Lemon curd, blueberry curd, or passionfruit pulp give a tangy contrast and elevate the dessert.

👩🏻‍🍳 Here’s how to make it

Fruit pavlova recipe — step-by-step

Meringue on a baking tray for pavlova.
  1. Preheat the oven: Begin with the oven at 300°F (150°C) or as instructed in the recipe card for your chosen method.
  2. Beat egg whites: Whisk egg whites until they form soft peaks. Clean, grease-free equipment is essential for best volume.
  3. Add sugar gradually: Add sugar one tablespoon at a time, beating well between additions until the meringue is glossy and holds stiff peaks.
  4. Fold in stabilisers: Gently fold in cornstarch, vinegar (or lemon/cream of tartar), and vanilla to keep the structure light and stable.
  5. Shape the pavlova: Spoon the meringue onto a parchment-lined tray and shape into a round with a shallow well in the centre to hold cream and fruit.
  6. Bake and cool slowly: Lower the oven temperature and bake until dry to the touch and set. Turn the oven off and leave the pavlova inside to cool slowly, which reduces cracking.
  7. Assemble: When completely cool, top with whipped cream and fresh or roasted fruit. Spoon lemon curd or passionfruit pulp over if using for extra brightness.

💡 Chef’s Guide: Expert Tips

My tips come from years of professional kitchen experience. They will help you make a pavlova that looks and tastes exceptional.

  • Room temperature eggs: Allow eggs to sit at room temperature before whipping; they reach greater volume.
  • Clean equipment: Use a dry, grease-free bowl and beaters to prevent deflation.
  • Add sugar slowly: Incorporate sugar gradually so it dissolves completely and the meringue becomes glossy and stable.
  • Cool in the oven: Let the pavlova cool inside the turned-off oven to avoid sudden temperature shifts that cause cracks.
  • Assemble last minute: Add cream and fruit just before serving to keep the meringue crisp as long as possible.

🍯 Storing meringue

  • Storage: Store the baked meringue in an airtight container in a cool, dry place for up to 2–3 days. Humidity will soften the shell, so keep it dry.
  • Separate storage: Keep the meringue base and toppings separate and assemble just before serving for the best texture.

❓FAQ

Can I make pavlova ahead of time?

Yes. The meringue can be prepared a few days ahead and kept dry in an airtight container. Assemble with whipped cream and fruit shortly before serving for the best texture.

Why did my pavlova crack?

Cracking usually comes from rapid temperature changes. Allow the pavlova to cool gradually in the oven to minimise cracks.

How do I prevent weeping?

Make sure the sugar is fully dissolved into the egg whites and avoid assembling on humid days. Use fresh cream and don’t over-sweeten the topping.

Substitutes for cornstarch?

Arrowroot powder can be used in equal measure. Omitting it is possible but may slightly change the internal texture.

Can I use a hand mixer?

Yes. A hand mixer works well but may require more time to reach stiff peaks compared with a stand mixer.

Ingredients

For the meringue

  • 4 egg whites (room temperature)
  • 1 cup sugar
  • ¼ teaspoon cornstarch
  • ½ teaspoon cream of tartar or lemon juice
  • 1 ½ cups whipping cream, whipped to soft peaks

For the peaches (optional)

  • ½ cup brown sugar
  • 2 peaches, cut into sixths
  • 2 apricots, cut into sixths
  • ¼ teaspoon cinnamon
  • Juice of 1 lemon

Instructions

To make the meringue

  1. Preheat the oven to 225ºF (about 107ºC) for the low-and-slow method. Use a reliable thermometer if needed.
  2. Place ¼ cup sugar and the egg whites in a clean bowl and mix on low for 2 minutes to begin incorporating air.
  3. Add another ¼ cup sugar and increase speed to medium for 1 minute.
  4. Add the remaining sugar along with cornstarch, cream of tartar, and vanilla. Whisk on medium-high until smooth, thick, and glossy with stiff peaks.
  5. Spoon the meringue onto parchment and shape into an 8-inch round with a shallow well in the centre.
  6. Bake in the oven for roughly 3 hours until dry and set. Turn off the oven and allow the pavlova to cool completely inside before removing.

To roast the peaches

  1. Preheat the oven to 350ºF (175ºC).
  2. Combine brown sugar, peaches, apricots, cinnamon, and lemon juice in a small roasting pan.
  3. Roast for 10–15 minutes until sugars melt and fruit softens. Remove and set aside.

To assemble

  1. Whip the cream to soft peaks just before serving.
  2. Fill the cooled pavlova with whipped cream.
  3. Top with roasted or fresh fruit, allowing any juices to glaze the meringue.

Notes

  • Use fresh egg whites and ensure all sugar is dissolved for a stable meringue.
  • Bake low and slow; the meringue should peel away from the paper when ready.
  • Allow to cool in the oven to reduce cracking and achieve the right interior texture.
