Brondies: Chewy Chocolate-Caramel Blondie Brownies

I’ll admit it: I like to think I’m above average intelligence (even if others disagree), yet I still have plenty of “Why didn’t I think of that?” moments. That’s exactly how I felt when I discovered these brondies — brownie meets blondie — and I couldn’t resist trying them.

The idea is brilliantly simple: a chewy, fudgy brownie layer paired with a rich, butterscotch blondie layer. Chocolate and butterscotch together, gooey and crackly textures — it’s a dessert mash-up that just makes sense. Think brookies, cronuts, and other hybrid treats; brondies are in that same delicious category.

About the Recipe

The recipe I used is adapted from a version I found online credited to Lights Camera Bake. After searching around, Emma’s version seemed the most straightforward and balanced, so I followed it closely. You can experiment by combining your favorite brownie and blondie recipes, but be mindful to scale both components so the layers are thin and bake evenly — similar bake temperatures and times help.

This particular adaptation produced exactly what I hoped for: a glossy, crackly top on the brownie and a tender, buttery blondie beneath. The contrast of textures and the blend of chocolate with brown sugar made every bite feel indulgent without being overwhelming.

Ingredients

For the brownie layer

  • 75 grams (about 1/3 cup) butter
  • 90 grams (about 1/2 cup) dark or semi-sweet chocolate
  • 60 grams (about 1/3 cup) brown sugar
  • 60 grams (about 1/3 cup) granulated sugar
  • 1 egg, at room temperature
  • 1 teaspoon vanilla extract
  • 20 grams (about 1/4 cup) cocoa powder
  • 42 grams (about 1/3 cup) all-purpose flour

For the blondie layer

  • 75 grams (about 1/3 cup) butter
  • 125 grams (about 1/2 cup plus 2 tablespoons) brown sugar
  • 1 egg, at room temperature
  • 1 teaspoon vanilla extract
  • 125 grams (about 1 cup) all-purpose flour

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Line an 8 x 8 inch square baking pan with parchment paper or foil. If you don’t use parchment, butter the pan well and dust with flour.
  3. Make the brownie layer: Melt the chopped chocolate and butter together in a saucepan over low heat or in short bursts in the microwave, stirring until smooth. In a separate bowl, whisk the egg, vanilla, brown sugar, and granulated sugar together for a couple of minutes until lighter and slightly fluffy. Add the chocolate-butter mixture to the egg-sugar mixture and whisk until combined. Stir in the cocoa powder and flour just until smooth.
  4. Make the blondie layer: Melt the butter and whisk in the brown sugar until combined. Whisk in the egg and vanilla until incorporated, then stir in the flour until a smooth batter forms.
  5. Spread the blondie batter evenly in the prepared pan and smooth the surface.
  6. Carefully spread the brownie batter over the blondie as evenly as possible.
  7. Bake at 180°C (350°F) for 28–32 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs attached. Avoid overbaking to preserve fudginess.
  8. Allow the bars to cool completely in the pan before slicing into squares or bars.

Notes

These bars keep well for 3–4 days at room temperature in an airtight container. I used 52% dark couverture chocolate, but other dark chocolate or compound chocolate should work fine. Either salted or unsalted butter can be used depending on your preference. Because this is essentially two desserts in one, expect a few extra dishes — but the result is worth it.
