Tips for This Week’s Meal Plan
- Sunday: Make a big batch of BBQ chicken. Serve sandwiches with coleslaw and grilled corn, then save leftovers for pizza and lunches. If you have extra chicken, serve it over baked potatoes for an easy meal. Cook extra corn to turn into a quick corn salsa for fajitas.
- Monday: Make extra baked potatoes to use for BBQ chicken–topped potatoes for lunches or another dinner. Save leftover London broil to add to the veggie fajitas if you like.
- Tuesday: Use leftover corn to make corn salsa for chips or to top fajitas.
- Wednesday: Turn leftover chicken into pizza—keep it simple by using French bread or pita as the crust.
- Thursday: Serve sausage and peppers as-is or in buns. Save leftovers to fold into Saturday’s baked pasta. Make extra fries to pair with Friday’s wraps.
- Friday: Build veggie wraps using leftover dill dip or use BBQ chicken for protein.
- Saturday: If you have leftover sausage and peppers, fold them into the rigatoni before baking for an easy, hearty dish.
- Ingredient Notes: Use russet potatoes for baking and frying. Buy extra corn for sides and salsa. Peppers and onions pull double duty for both fajitas and the sausage dinner. Yellow onion works well in corn salsa. Serve extra coleslaw with lunches or as a side throughout the week.
