Honeycomb Crunch Chocolate Cake

The base is a dense, moist chocolate stout cake that stands up to rich fillings. For the filling I use salted caramel buttercream inspired by childhood favourites—smooth dulce de leche folded into butter, brightened with a pinch of flaky sea salt. Crushed honeycomb folded into the buttercream adds the textural contrast that makes every bite exciting.

After filling the layers with salted caramel buttercream, the whole cake is covered in a dark chocolate ganache and finished with extra honeycomb pieces and a sprinkle of flaky salt. If you can’t find traditional honeycomb candy, bars like Crunchie or Butterfinger make a reasonable substitute for the crunch and flavour.

How to make dulce de leche

Dulce de leche is a creamy caramel made by slowly heating milk and sugar until it becomes thick and caramel-coloured. You can buy it ready-made, or make it easily at home using a can of sweetened condensed milk.

To make it from a can: remove the label, submerge the unopened can completely in a pot of water, bring to a boil, then simmer for 3–4 hours. Keep the can fully covered with water throughout cooking to prevent it from overheating. Allow the can to cool completely before opening. The condensed milk will have transformed into a silky dulce de leche perfect for buttercream.

Salted caramel buttercream

This buttercream uses dulce de leche as its flavour base. Use a stand mixer if you have one, or a hand mixer to achieve a light, fluffy texture.

Whip softened unsalted butter until pale and airy, then add the dulce de leche (or a prepared caramel) along with a pinch of flaky sea salt. Mix until completely combined. Crush the honeycomb pieces in a food processor or by wrapping them in a clean tea towel and crushing with a rolling pin. Fold the crushed honeycomb into the buttercream so the crunch is evenly distributed.

Spread the honeycomb buttercream between your cake layers and use the remainder to coat the sides and top. The combination of soft caramel buttercream and crisp honeycomb is what gives this cake its character.

Recipe Tips and Notes

  • When boiling a can of sweetened condensed milk to make dulce de leche, always keep the can fully submerged in water. If the can is exposed, it may rupture.
  • Flaky sea salt can substitute for Maldon salt for a similar finishing texture and flavour.
  • Use unsalted butter for the buttercream, since you’ll add flaky salt separately.
  • Store leftover buttercream in an airtight container in the refrigerator for up to a week. Bring to room temperature and re-whip before using.
  • If you can’t find honeycomb pieces, crushed Crunchie or Butterfinger bars are a reasonable alternative.
  • A cake decorating turntable and offset spatula make layering and smoothing the frosting much easier.

Honeycomb Crunch Chocolate Cake

Ingredients

For the cake

  • 3/4 cup (180 ml) stout (Guinness or other)
  • 1/4 cup (60 ml) strong black coffee
  • 1 cup (250 g) unsalted butter
  • 3/4 cup (90 g) unsweetened cocoa powder
  • 2 cups (280 g) all-purpose flour
  • 2 cups (400 g) sugar
  • 1/2 tbsp baking soda
  • 3/4 tsp salt
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 2/3 cup (160 g) crème fraîche or sour cream

For the salted caramel buttercream

  • 1.5 cups (350 g) butter, softened (unsalted)
  • 14 oz (397 g) dulce de leche or prepared caramel
  • Pinch of flaky sea salt
  • 50 g (2 oz) crushed honeycomb

For chocolate ganache

  • 1 cup (225 ml) whipping cream/double cream
  • 1/2 lb (225 g) dark chocolate, chopped

For decoration

  • A handful of honeycomb pieces
  • Pinch of flaky sea salt

Instructions

  1. Preheat the oven to 350°F (180°C). Butter three 8″ cake pans and dust with flour.
  2. In a saucepan, heat the stout, coffee and butter until gently simmering. Whisk in cocoa powder until smooth. Set aside to cool.
  3. In another bowl, whisk together flour, sugar, baking soda and salt. In a separate bowl, beat eggs, vanilla and crème fraîche.
  4. Once the chocolate mixture has cooled, add it to the egg mixture and combine. Add the dry ingredients gradually and mix on low until just combined. Divide batter among the pans.
  5. Bake for about 30 minutes, or until a skewer comes out clean. Cool on a wire rack. Once cooled, you may wrap and chill the cakes overnight for easier assembly.
  6. Make the salted caramel buttercream by whipping softened butter until pale, then adding dulce de leche and a pinch of flaky salt. Mix until smooth. Fold in crushed honeycomb.
  7. Fill the cake layers with buttercream, apply a thin crumb coat, and chill for 30–40 minutes.
  8. Make the ganache by bringing cream to a boil, removing from heat, and stirring in chopped chocolate until melted. Cool, then whip briefly until lighter and slightly fluffy.
  9. Cover the chilled cake with ganache. Decorate with extra honeycomb pieces and a final sprinkle of flaky salt.
