How to Make Dill and Garlic Instant Pot Mashed Cauliflower

What You’ll Need for This Recipe

To prepare this dish, gather the following ingredients:

  • 1 whole head cauliflower, washed and trimmed
  • Minced garlic (convenient and flavorful)
  • Fresh dill (best for bright flavor)
  • Butter or margarine, to taste
  • Chicken broth (liquid)
  • Instant Pot or similar electric pressure cooker

Getting Started

The Instant Pot makes this recipe incredibly quick—about 4 minutes under pressure. Place the trimmed head of cauliflower in the Instant Pot, pour the chicken broth over it, add the butter, dill and garlic, close the lid, and cook on High Pressure for 4 minutes. The cauliflower will become tender and ready to mash or whip.

Arrange the ingredients in the pot as shown in the photos and start the 4-minute cook time.

When the cook time ends, release the steam, remove the lid, and mash or whip the cauliflower to your preferred texture. A hand mixer produces a smooth, creamy mash; a potato masher or immersion blender also work depending on how rustic or silky you want the result.

Tips and Tricks for the Best Mashed Cauliflower

  1. Finish with fresh dill for brightness—sprinkle extra on top right before serving.
  2. Use minced garlic for convenience and to add moisture and garlic oils that boost flavor.
  3. A hand mixer or immersion blender will create a creamier texture than mashing by hand.
  4. Use liquid chicken broth for the best depth of flavor; adjust amount for desired consistency.

The finished mash is a satisfying, lower-carb alternative to mashed potatoes. It’s mild, creamy, and pairs well with many main dishes—kids and adults alike often enjoy it. Top with an extra pat of butter and a sprinkle of dill for presentation and flavor.
