This chicken salad is a great make-ahead option for busy days, potlucks, or picnic lunches. The balance of mayonnaise and sour cream keeps it rich and creamy, while lemon juice adds brightness. Celery and green onions give crunch and freshness, and red grapes add a pop of sweetness. Cashews are optional but add a delightful crunch when included.

Ingredients

  • 5–6 chicken breasts
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 cup finely chopped celery
  • 2 green onions, finely chopped
  • 1 T lemon juice
  • 1/4 tsp pepper
  • 1/8 tsp garlic powder
  • 1/2 tsp salt
  • 1 T dried parsley
  • 1 cup red seedless grapes, quartered
  • 1 cup cashews (optional)

Instructions

  1. Cook the chicken until done. You can poach, bake, or use an Instant Pot. Allow the cooked chicken to cool, then shred or dice into small pieces.
  2. In a bowl, combine the mayonnaise, sour cream, chopped celery, green onions, lemon juice, pepper, garlic powder, salt, and dried parsley. Stir until smooth and well blended.
  3. Pour the dressing over the shredded chicken and gently fold until all pieces are evenly coated. Be careful not to mash the chicken.
  4. Refrigerate the mixture until you’re ready to serve. Just before serving, fold in the quartered grapes and cashews so they stay crisp and juicy.

Notes

*This recipe yields enough filling for about one Costco container of 12 large croissants. If you prefer a lighter version, reduce the mayonnaise or substitute Greek yogurt for some of the sour cream.

*Variations: add diced apples instead of grapes for tartness, or swap almonds for cashews for a different crunch. Fresh herbs like dill or tarragon can also complement the flavors.
