A Healthy Stir-Fry the Whole Family Will Love

One of the best things about stir-fry dinners is how easy they are to pack with vegetables while still being kid-friendly. Even picky eaters tend to enjoy a saucy stir-fry, so it’s a great way to get a variety of vegetables on the plate without a fight.

Each child may have different favorites—one likes asparagus, another prefers green beans—but when you mix veggies into a savory stir-fry sauce, the meal gets eaten. This makes the Quick Salmon Noodle Bowl a reliable family favorite.

How to Make the Quick Salmon Noodle Bowl

The key to a great stir-fry is mise en place and a very hot pan. This dish cooks quickly, so have all ingredients prepped and ready before you start.

If salmon isn’t your preference, you can swap in chicken, ground pork, shrimp, or a plant-based protein. The stir-fry sauce is the star, so feel free to adapt the protein and vegetables to suit your tastes.

Start by heating a wok or large skillet until very hot. Add a tablespoon of oil and the diced, seasoned salmon. Cook the salmon for about 3–4 minutes, tossing often, until it develops a light brown edge and is cooked through. Remove the salmon to a plate while you cook the vegetables.

Add the remaining oil to the hot pan and cook the broccoli florets until bright green but still crisp—about 5–6 minutes. If you have a lid, placing it on the pan for a minute or two helps the broccoli steam and soften faster. Next, stir in a couple handfuls of coleslaw mix and cook until wilted.

Return the salmon to the pan with cooked and rinsed lo mein noodles, then pour in your stir-fry sauce. Toss everything together until the noodles, salmon and vegetables are evenly coated with sauce. Serve immediately and garnish with sesame seeds if desired.

This healthy stir-fry comes together quickly using a 5-minute homemade stir-fry sauce.

Ingredients

  • 1/2 lb. salmon, diced and seasoned with salt and pepper
  • 2 tablespoons canola oil, divided
  • 2 1/2 cups broccoli florets
  • 1 1/2 cups coleslaw mix
  • 1 (8 oz.) package lo mein noodles, cooked and rinsed with cold water
  • Stir-fry sauce (about 1 1/2 cups)
  • Sesame seeds for garnish

Instructions

  1. Heat a wok or large skillet over high heat with 1 tablespoon of oil.
  2. Add the salmon and cook for 3–4 minutes, tossing often until cooked through. Remove the salmon to a plate and add the remaining tablespoon of oil.
  3. Add the broccoli and cook 5–6 minutes until bright green but still firm. Cover briefly to steam if needed. Add the coleslaw mix and cook until wilted.
  4. Add the cooked noodles, return the salmon to the pan, and pour in the stir-fry sauce. Toss until everything is evenly coated and heated through.
  5. Garnish with sesame seeds and serve.

Recipe Notes

Add the stir-fry sauce gradually until you reach the sauciness you prefer. The full amount yields a saucier dish; start with half and adjust to taste if you prefer less sauce.
