They don’t need an elaborate recipe, but they’re worth sharing because they disappear quickly at gatherings. I once ate nearly the whole batch as my dinner—no regrets. They’re simple to make, ideal for parties, and always a crowd-pleaser. If you bring them to an event, plan on making several times the amount shown here; they won’t last long.

Start with a box of phyllo shells. This is the brand my grocery carries; you may find other brands as well. The box typically contains about 15 shells, which is a convenient serving size for appetizers.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and arrange the phyllo cups on it so they bake evenly.

Brie is rich, creamy, and melts beautifully—making it an ideal choice for these cups. Choose a wedge of Brie and cut it into small pieces that will comfortably fit inside each phyllo shell.

Place a piece of Brie into each shell. The cheese will melt in the oven, creating a creamy base for the jelly topping.

Apple jalapeño jelly provides the perfect balance of sweet and spicy against the buttery Brie and flaky phyllo. Any pepper jelly will work, but the fruit-and-heat combination pairs especially well with the cheese.

Add about a small spoonful of jelly on top of the Brie in each cup, then bake for about 7 minutes. The Brie should be melted and the phyllo warmed through.

Let the cups cool for a few minutes if you can—the filling will be hot. If you’re impatient like me, dig in carefully and enjoy the gooey, sweet-and-spicy bite right away.

- 8 oz Brie cheese
- 12.5 oz Apple jalapeño jelly (or any pepper jelly)You’ll only use about a quarter of the jar
Instructions
